Little balls of sunshine

These sweet treats are simple to make and absolutely delicious.

Ingredients:

3 egg whites (4 if using small eggs)
150g white sugar
200g dessicated coconut
zest of 1 small lemon

Directions:

In a medium sized bowl, thoroughly mix together the sugar, coconut and lemon zest.
In another bowl, beat the egg whites until firm peaks form.
Gently fold the egg whites into the dry ingredients until just incorporated.
Cover the bowl with plastic wrap and refrigerate for at least one hour.
Preheat oven to 150°C with the shelf in the middle position.
Gently roll into walnut-sized balls (this part is messy and can be frustrating if they don’t hold together, but persevere gently or you’ll crush all the air from the mix).
Place on a paper-lined baking sheet and bake for about 20 minutes, until golden.
Cool before storing in an airtight container.

Makes about 30.
