I’d seen pictures of these spiral pies and had a guess at how to put one together – it worked wonderfully!
Ingredients:
Phyllo pastry sheets
500g feta, crumbled
6 large red onions, caramelised
olive oil
Directions:
Preheat over to 180°C and brush a pie dish with olive oil.
Mix the feta and onions together in a bowl. Take a sheet of phyllo and put a line of filling along one edge, about 2 cm in. Brush the rest of the sheet with olive oil and roll it up as tightly as you can. Curl it into a snail in the middle of the dish.
Repeat with the rest of the filling and as much phyllo as you need (I used 9 sheets, but it will depend on the size of your sheets), joining them together in the dish to form a spiral. Brush with plenty of olive oil.
Bake until golden, about 30 minutes.
Cool and serve. The easiest (and the traditional way, if I’m not mistaken) is to break off bits and eat it with your fingers. Delicious!
