Meze: Zucchini fritters


These were awkward to fry because they ended up very soft and hard to flip so they turned out looking kind of gross, but they tasted amazing!


1 large zucchini, grated and drained
100 g feta, crumbled
1 onion, finely sliced and squeezed in paper towel
1 egg, lightly beaten
4 tablespoons dry breadcrumbs (more if needed)
squeeze of lemon juice
oil for frying


Mix together all the ingredients except the oil. Shape into small patties and fry in very hot oil a few minutes on each side, until dark golden. When cooked, remove to a platter covered with paper towel to drain. Serve at room temperature.
