Apple cinnamon muffins

I had a few apples that had spent too long in the fruit basket and were going soft so I made apple sauce with them… then had to decide what to do with the apple sauce. Muffins to the rescue! These are amazingly light and fluffy.

Makes 24

Ingredients

3 1/2 cups all-purpose (plain) flour
1/2 cup white (granulated) sugar
1 tbsp baking powder
1 tsp salt
2 tsp cinnamon
2 eggs
2 cups apple sauce
150ml light olive oil

Directions

Preheat the oven to 200°C. Grease 2 muffin pans with oil or line with paper liners.

Whisk flour, sugar, baking powder, salt and cinnamon together.

In a separate bowl, whisk eggs, apple sauce and oil together.

Add dry ingredients to wet ingredients and stir just enough to combine. Do not overwork the mixture – the flour should only just be incorporated.

Fill the muffin cups 2/3 full. Bake on centre rack for about 20 minutes or until golden and a toothpick inserted in the centre comes out clean. Remove to a wire rack to cool completely.
