Cannellini bean and roasted garlic spread

This is a super simple but rich and flavourful spread for fresh crusty bread or crispy crackers.

Ingredients

1 x 400g can cannellini (or white) beans, drained
1 roasted head garlic
olive oil as needed
salt to taste
chilli flakes to taste

Directions

Throw the beans and garlic and a good drizzle of olive oil into the food processor, or mash well with a fork in a bowl.

Add enough olive oil to get the spread to the desired consistency (I used about 3 tablespoons) and keep pulsing/mashing until smooth.

Add about 1/4 teaspoon of salt and 1/2 teaspoon of chilli flakes , more or less to taste.

Transfer to a bowl, cover with plastic wrap and let sit for a couple of hours to let the flavours develop before serving.
