The Doctor is back! This calls for a celebratory snack. 🙂
I found myself in a quandary, because as far as I can tell from my web-searching, Jammie Dodgers have a heart-shaped hole, but in “Victory of the Daleks”, the Doctor’s Jammie Dodger has a round hole. Was it a ring-in? An impostor?! Who knows! Seeing as I had made the round-holed version for the Xmas special in December, I went for the hearts.
225g butter, room temperature
150g white sugar
1 egg, lightly beaten
1 tsp vanilla extract
350g all-purpose (plain) flour
1/4 tsp salt
1 tsp baking (bicarb) soda
Strawberry jam for filling
Cream butter and sugar until fluffy. Add egg and vanilla and mix well.
Sift together flour, salt and baking soda and add to butter mixture. Mix just until dough comes together.
Divide dough into 2, flatten slightly into discs, wrap in plastic and refrigerate for 30 minutes.
Preheat oven to 180°C.
Roll out each piece of dough to 1/2cm thick. Using a round cookie cutter, cut out 30 cookies from each sheet of dough. Cut a smaller heart-shaped hole out of the centre of half of them. You will need to re-roll the dough scraps, but you should work as quickly as possible so it doesn’t soften too much.
Put the cookies on parchment-lined baking sheets and bake for about 14 minutes, swapping sheets half way, until the bottoms just start to brown.
Remove from oven and immediately spread the jam thickly on the half of the cookies without holes, then put the other half (with holes) on the tops.
Cool on a wire rack.
Serve with a cup of tea while watching Doctor Who. 🙂
